

China teas are produced in 16 regions producing a wide variety of strength and flavours. Fermentation creates the range from White Tea (Unfermented) through Green (Partially Fermented) to Black (Fully Fremented). The addition of flowers such as Rose and Jasmine and the drying over smoke creates even more diverse flavours and aromas. Further confusion is added by regional names in Cantonese or Fukienese, but the result is a great selection of marvellous teas.
